Ginger Mango Conch
Ingredients:
4 whole tenderized and peeled conch
2 juiced limes
1 qt of water
Preparation:
Bring the water and the lime juice to a boil in a medium sauce pan and add the conch for 7-10 seconds only. Remove the conch from the pot and slice very thin. Place the conch in the mango dressing and sere over fresh greens garnished with the chopped onion and lime.
Dressing Ingredients:
1 ripe un-seeded and peeled mango
1 tsp of fresh chopped ginger root
1 tsp of sesame oil
1 tsp of rice wine vinegar
1 tsp of soy sauce
2 chopped green onions
1 wedged cut key lime
Preparation:
To create the dressing, process mango and ginger in a blender until smooth. Then add the sesame oil vinegar and soy sauce to mixture.
